Nutritionists often puzzle over the French paradox, that a people who eat foie gras and butter in everything should actually be as healthy as they are. And then there's the American paradox: that a nation as health-obsessedas ours should be so unhealthy. New York Times writer Michael Pollan says those obsessions have lead the U.S. down the wrong path. "The public health campaign against fats," he says, "coincides really well with the obesity epidemic. Enough said." Monday morning at 9, the author of In Defense of Food: An Eater's Manifesto joins us to explain why we should eat food, as opposed to chemicals posing as food.
