When it comes to owning a restaurant, most chefs like to have a signature dish or style that keeps their customers coming back. In this edition of Beyond the Dish, we visit award-winning chef Jonathon Sawyer at The Greenhouse Tavern, who is known for his efforts in environmental sustainability.
While at the Greenhouse Tavern, you might be inclined to partake in a cold beverage like a beer. If you do, chances are you're choosing from among one of the many craft beers made in Ohio. The state is the 7th largest exporter of beer in the country. The industry employs some 44,000 people, and has an economic impact of about $3.9 billion. Within our broadcast area, there are dozens of craft brew manufacturers who are part of northeast Ohio's long history of making beer. We take a look into the local beer industry.
The future of beer making in Cleveland looks as promising as it's past. Construction is underway for a Hofbrauhaus, a German-style beer garden being built in Playhouse Square, but not everything about the complex is brand new. The design will wrap around a century-old Tudor Mansion located behind the State Theatre which serves as the clubhouse for the Hermit Club. The Club members have agreed to allow the Hofbrauhaus to incorporate their clubhouse into the design in exchange for having the building renovated. So who are these crafty Hermits? Some secret society? Not quite... we'll explore.Chef Jonathon Sawyer, Greenhouse Tavern
