2 cups fresh Maine Lobster cooked
4 cups penne noodles
2 Tbsp chopped shallots
8 ounces grated cheddar cheese
8 ounces grated asiago
8 ounces grated fontina cheese
8 ounces grated provolone
8 ounces grated parmesan
8 ounces heavy cream
4 ounces white wine
2 Tbsp butter
Salt and pepper to taste
In a heavy bottom saucepan, saute the shallots in butter until they are soft and tender. Lower the flame and add the cheeses and white wine. Stirring constantly, add the heavy cream and continue to stir until all of the cheese is melted. If the sauce is too thick, add more cream. If it is too thin, add grated parmesan chees.
Boil noodles until cooked and drain. In a casserole dish, pour cheese sauce over cooked noodles, add the cooked lobster meat and sprinkle with grated parmesan and bake in a 350 degree oven for ten minutes or until cheese is golden and bubbly.
Serve immediately.
